It’s August and it’s HOT and HUMID. I’ve been on a popsicle kick since rediscovering my zoku popsicle maker and these fun push-pop-esque popsicle molds from long ago. Combine that with delicious, ripe melons from the local farms and friends and I’ve been making fruity popsicles ever since.

When my cravings hit their worse, ultimately it was my spice cabinet that kept me from running to the store for a bag of Gluten Free Tate’s Cookies. The thought may have occurred to me on one, two, or ten occasions. My cravings for sweets are always at it’s worst post meal time. I’ve got that savory taste on my tongue and I just want something to balance it out.

Used in approximately 75 percent of packaged foods purchased in the United States, most of us, myself included, don’t even realize how much sugar we actually take in every single day. The average American consumes anywhere from a quarter to a half pound of sugar a day. Every time I read this statistic my mind is blown.

So if I had to pick my one go to power house snack hard boiled eggs would be it. It is a grab and go protein that is super healthy and low calorie. Every Sunday I make about a dozen eggs so that I have a convenient protein snack on hand throughout the week. Often I’m really basic with how I eat them and I just sprinkle them with a little truffle salt and pepper and just bite right into them. When I want to change it up I whip up a batch of egg salad with the eggs.

Lasagna is one of the favorite dishes in our household, but I don't always take the time to make it because it's not necessarily the most healthy dinner. All those layers of pasta with mozzarella and ricotta is just HEAVY. For my man's birthday I always make him a lasagna so when I went to make him one this year I decided to lighten it up a bit and he was SHOCKED when I told him it was completely vegan. This recipe is addicting and I think I might have eaten more of this batch of lasagna than him this time around. oops. HBD! lol
I’m lucky my job requires me to be in a creative zone on a regular basis. The thing is sometimes it is just really nice to create something just for the sole purpose of letting your creativity flow. Fuck the outcome! Creating something with out any expectation of how it may or may not turn out is completely and utterly freeing. One of my favorite Sunday rituals is taking a few hours to hide away in my office/studio to allow absolute creative.

Ugh I’ve done it again! Over the last two months my stomach has become increasingly hostile. It all started with severe bloating after meals, which I’m pretty sure came from gluten contamination dinning out one evening. This is one of my all time favorite summer dishes. When there's pesto on the table it feels like summer and this recipe is so tasty and bright it will possibly outshine the summer sun. My Mom whips up the most decadent pesto pasta for our guests at our River house every weekend of the summer. My friends and I are all obsessed and live for a invite to the river for some more of my Mama's pesto pasta. This is a lightened up version that is simple, rich and dairy free. The olive oil brings the decadence to this dish so make sure you use a good quality EVOO and you won't even miss the butter and cream.
It seems like summer just got here how the hell are we already into JULY?!?! I know we aren’t technically there yet but it is only a matter of days. I don’t know about you but time feels like it is moving at hyper speed. Living on the East Coast I cherish the warm and sunny summer months. I love the diversity of the seasons in PA but I wouldn’t mind an extended summer. My personal opinion is that three months is just not enough time. Could I perhaps have more months to run around in a bathingsuit barefoot and happy please?!?!
Gigi inspired me to start a thorough Spring cleaning from within. I attend the monthly Green Lodge Goddess gatherings organized by The Stoned Housewife and Luminous Collections and it brings together total babes mainly in the cannabis industry. I will have to post more about the power and connection these meet ups bring, but in April one of the women who spoke there was talking about how connected we are with the earth and it really resonated with me because I had been ferociously cleaning under the Taurus new moon and noticing that I feel best when I am following along with the stars and eating what is fresh and local that comes from the earth’s natural, seasonal cycles. So naturally spring is a time for detoxifying plants and cleaning all around and within.
Yea I know I don’t like the idea of giving up my morning coffee either, but when it comes to our period symptoms it isn’t doing us any favors. I actually cannot stop making/eating/repeating this banana bread recipe. It might be a problem (well I did put a pause on it when I went on the juice cleanse last week) and now I'm back on board. It is so rich and moist, but healthy and light. It's full of good for you ingredients and although I am trying to get away from all forms of sugar for a month along with gluten and dairy, this is helping to ease me into that.
