Strawberry, Pistachio, Goat Cheese Guacamole.

I try to eat locally as much as possible but living on the east coast there are just some fruits and veggies you can’t get. I’m not willing to pass up on some of my favorites completely but still make the effort to make sure I always purchase organic. So what is my number one guilty produce pleasure ……..AVOCADOS.  I’m sure that the versatility of this fruit is not lost on any of you but I do want to encourage you all to start getting a little more fancy with your guacamole. Now don’t get me wrong, there is nothing wrong with traditional guacamole but the avocado being as versatile as it is makes it easy to be creative with in terms of experimenting with new flavors.  I have never been one to stick with tradition or follow a recipe so experimenting with guacamole combinations has become almost a hobby in and of it’s self.  I have made tons of combinations and I promise you I will absolutely share them with you all but for now here is one of my favorite summer combinations.  We are at the height of strawberry season on the east coast so it is no surprise that this delicious berry is the star of this guacamole recipe. 


Prep Time: 15min Serves: 6-8 people


  • 4 ripe large avocados
  • 1/2 pound of fresh strawberries
  • 1/2 cup shelled pistachios
  • 5 ounces of goat cheese
  • 2 jalapeños (use one or eliminate all together if you are not a fan of heat)
  • 1 Lime
  • 3 tbsp fresh cilantro
  • Ground Sea Salt to taste
  • 1 Tablespoon Hempseeds (optional) 





In a bowl, mash avocados and lime juice together with a fork.


In a food processor pulse the garlic, cilantro, jalapeno, and pistachios until finely chopped; mix into avocado


Fold in strawberries and goat cheese and season with salt.


Garnish with Pistachios, sliced strawberries and a sprinkle of hemp seeds; serve immediately with tortilla or plantain chips.
