  1. Preheat oven to 400F
  2. Chop cauliflower into bite size pieces
    • I like to cut the greens off of the bottom, then “core” the cauliflower carefully cutting away the florets in a circle around the stem.
    • Then I slice them into smaller, bite sized pieces that are close to the same size for even baking purposes
  3. In a medium bowl add the flour and water/broth. Stir to  combine, you want the batter to be similar to a pancake batter consistency, not too liquid-y, not too thick.
    • If it's too thick add more liquid, too watery sprinkle in more flour until the desired consistency is achieved
  4. Mix in your spice blend if you want, it gives an extra boost of flavor, but not pivotal since you will be adding sauces for flavoring.
  5. Line a sheet pan with parchment paper.
  6. Dip your bite sized cauliflower pieces into the batter.
  7. Use a slotted spoon or tongs to place the coated cauliflower onto the parchment lined baking sheet.
  8. Bake the cauliflower for 20-25 minutes or until they are golden and easily peel off of the parchment.
  9. While the cauliflower bites are cooking get your sauce mixing bowls ready. You will want 1 bowl for each flavor you are using. I usually keep it simple and use 2 flavors, but you can get wild.
    1. Some Sauces I recommend
      1. BBQ
      2. Spicy Sriracha (I mix sriracha and vegan mayo for this sauce)
      3. Sweet Garlic Chili Sauce
      4. Spicy Peanut
      5. Cajun Spice blend (cajun spices and vegan mayo)
  10. When the cauliflower are cooked and golden use tongs to add them to your sauce bowls and coat them in sauce.
  11. Once all the cauliflower are coated place them back on the parchment paper and bake again for an additional 10-15 minutes.
  12. Enjoy with extra sauce or some vegan blue cheese (recipe coming)
  13. I like to reheat leftovers and make a cauliflower wrap or add them to a salad, that is if you have any leftover ;)
