Memorial Day is the official kick-off to the summer season. Can I get a hell yea to a three day weekend! I've put together a great cocktail recipe for you to ring in summer with this weekend. It is a twist of an old classic pulling together all the ingredients of a mojito with some added twist. The recipe was created to share and makes around 8 servings, so it is the perfect bring along to any Memorial Day parties you may be attending this weekend. This mixed berry rum spritzer is kick-ass!
What You Need:
1/3 cup blueberries
1/3 cup raspberries
1/3 cup blackberries
1 cup strawberries
1/2 cup of lime juice (about 3 limes juiced)
2 cups of Bacardi or any light rum
2 cups cups of Pellegrino
Mint Simple Syrup
2 cup water
1 cup agave
1/2 cup of mint
The How To:
1) To make your mint simple syrup combine water, mint, and agave in a saucepan. Place over medium to high and bring to a boil. Once mixture reaches a boil remove from heat and let cool.
2) Combine the berries and cooled mint simple syrup in a blender and process until smooth.
3) To remove seeds from the berry puree use a fine mesh strainer or sieve to filter the seeds out of the puree. Use the back of a spoon or rubber spatula to scrape the seeds away from the bottom the sieve as the puree filters through to the bottom bowl. If you don’t do this it will take forever for you to filter the puree.
4) In a large pitcher combine the Pellegrino, rum, lime juice, berry puree, and Zen Berry Fresh Terps. Stir until well combined.
Fill glass with ice and a small handful of mixed berries. Fill the glass with your berry rum spritzer, top with mint, add a drop of FreshTerps and enjoy!
